Farm information: Each year we look forward to the lots that are produced by this long standing coffee producing family who originally founded the farm in 1875. Today the farm is owned an operated by Luis Valdes and his son ‘Wicho’. One-third of the farm’s 300ha is dedicated to natural forests providing habitat for deer and birds. The region itself is surrounded by vast mountain ranges, a dense rainforest having a cooler climate and plenty of rainfall. After the cherries are picked they are transported to the farms wet mill where they are pulped and immediately fermented for 48 hours. The coffee is then left in parchment for 24 hours and dried for a further 7-10 days until it etches 30% humidity and then transferred to a greenhouse for a further 15-30 days of drying on raised beds.
This coffee is clean and sweet with a bright acidity and a delicate body. Notes of chocolate, red apple, toffee, plums and a lingering maple finish.
The above coffee is part of our “Sunday Roast” collection. Meaning that we only get to roast it once a week because it’s a little more special. Orders must be received by COB Friday (WST) to be roasted Sunday and shipped the following Monday. Pass me the gravy please mum.
