Farm information: Produced by brother Javier and Hector from the Tres Rayas Cooperative, coffee cherries once fully ripped are hand picked and exposed to a dry extended  34 hour anaerobic fermentation and then shade dried in parabolic beds over 3-4 weeks. This 100% Caturra microlot is a natural mutation of the Red Bourbon. This is a juicy, sweet coffee that represents one of the reasons why Colombia produces arguably our favourite coffees throughout the year. The extended fermentation really gives this a lingering vibrancy especially once cooled. If we were only to drink one coffee for the rest of our lives….could this be it?
