Farm information: There is has always been something about Colombian coffee that makes it regular favourite amongst coffee geeks. If you were to drink a coffee year round anytime of day the answer for many would be a coffee from Colombia. As  the worlds third largest coffee producing country they are renowned for producing  high quality, high altitude specialty coffee. This lot was produced by a small group of eight specialised coffee farmers in the region of Bruselas farming Caturra, Colombia and Tabi varietals. The group is collectively converting to organic agriculture, making their own fertilizers and fungicides, installing complex water filtration systems that use gravity, stones and sand to remove all mucilage residues from waste water to not contaminate water systems. Cherries are picked as ripe as can be, depulped the same day, fermented until they reach their ideal washing point for maximum sweetness, and fully washed. Each producer has a different regiment, but many dry on raised bets or drying patios, where the coffee is covered with shade cloths.
