Farm information: From the scenic ranges of the Apaneca mountain range in El Salvadors Ataco region, this coffee estate has been handed down over generations and has been producing coffee for over 100 years. Following hand picking of the ripest cherries, the fruit is pulped without water and transferred to open patios. These are raked by hand every 20 minutes to ensure even drying, a process that usually lasts up to 20 days. This guarantees the sticky mucilage is left of the seed which therefore imparts a nice heavy sweetness to the coffee.
