This syrupy-sweet Variedad Colombia comes from El Diviso, a small family farm in La Unión, Nariño, where coffee is very much a shared craft.

Ruby Urbano and her family alongside her husband Alberto and daughters tend every step of production themselves, from the fields to fermentation and drying. That hands on approach is reflected in the cup: generous, balanced, and quietly expressive.

Carefully harvested at peak ripeness, the cherries undergo meticulous sorting before a 30-hour underwater fermentation. This initial wet fermentation builds depth and body, lending richness to an already versatile, all-round profile.

After pulping and gentle washing, the coffee is slowly dried under controlled conditions to preserve clarity and sweetness. Ruby’s work sits within a broader commitment to quality, traceability, and sustainable farming in Nariño.

The result is a coffee that feels both grounded and refined an honest expression of family, place, and process.
