A fermentation technique borrowed from winemaking. Cherries are placed in sealed, oxygen-free tanks rich in carbon dioxide to intensify fruit notes.
Grown in the volcanic highlands of Batukaang, Kintamani, at altitudes between 1,300 and 1,600 MASL.
Karana is a collaboration between two like-minded coffee professionals, Rodney Glick (Australia) and I Kadek Edi (Indonesia), both Certified Q Graders with deep expertise across processing, roasting, and the coffee supply chain. Based in Bali with a bureau in Medan, Sumatra, Karana are farmers, processors, and traders of Indonesian specialty and commercial coffee, embedded in traditional village life while focused on the global market. They work across Arabica and Robusta origins throughout Bali, Java, Sumatra, Flores, Sulawesi, and Papua, maintaining quality from farm to cup. Karana has pioneered advanced processing techniques, including Natural Carbonic Maceration, and achieved national recognition with top-scoring coffees in Indonesia’s first Cup of Excellence in 2021. All coffees are fully traceable, community-focused, and processed with meticulous care, showcasing Indonesia’s volcanic terroir and innovation.
