Decaffeinated Colombia
High in Popayán, Cauca, around 75 growers contribute to this long-term coffee program. Sheltered by the Andes at 1,700 MASL, the region enjoys consistent climatic conditions that help its coffees develop their natural sweetness and citrus character. Growers are encouraged to prioritise quality, with premiums of up to 20% above market prices awarded following assessment. Once picked, the cherries are depulped and washed, then dried on raised beds for five to seven days. Finally, the caffeine is gently removed using spring water and sugar cane ethyl acetate, preserving the coffee’s character while enhancing its sweetness.
