Cherry Dark Chocolate Toasted Almond

El Ocaso Farm, owned by third-generation coffee grower Santiago Patiño, spans 30 hectares in Salento, Quindío.

Bought by his family in 1985, the farm transitioned from cattle to exclusively cultivating coffee by 2004, focusing on traditional Colombian varieties and experimenting with natural, honey, and diverse fermentation methods that create complex flavour profiles.

Santiago refined fermentation protocols and introduced exotic varietals including Gesha, Sidra, Tabi, Caturra, Papayo, and SL28.

Managed with regenerative organic practices, the farm uses microorganisms to combat
pests and composts coffee husks to enrich the soil.

A carefully maintained shade system creates a unique microclimate, slowing cherry maturation and enhancing sugar concentration for richer coffees.

Despite challenges from climate change and labor shortages, Santiago remains committed to preserving his family’s coffee legacy while mentoring the next generation of growers.
