This process is a rigorous three-stage method that ensures the highest quality and complexity in the final product. First, the coffee cherries are cleaned and disinfected when they arrive at the processing station, then are left to rest for 24 hours. During this time, natural reactions inside the cherries help develop richer aromas and flavours.
After this oxidisation, the outer layer of the cherries is removed (de-pulped), and the beans are washed to get rid of any remaining sticky coating. This washing step helps give the coffee a clean and crisp taste. Finally, the beans go through a mechanical drying process, which stabilises the beans and preserves their intricate flavours. This precise drying method is vital for maintaining the coffee's consistency and quality.
