El Jardin Colombia Espresso

cacao Raspberry
This coffee comes from the steep, rugged hills near San Vicente in Inzá, Cauca, Colombia. El Jardín, meaning "the garden," spans just one hectare and sits at 1,972m above sea level. Don Leonel, as he is affectionately known, has dedicated his life to coffee farming, viewing it as part of his cultural heritage. To pass this legacy on, he has given each of his seven children a plot of land on the farm, successfully encouraging them to pursue coffee-growing careers. The coffee from El Jardín was selectively hand-harvested by Don Leonel and his family, then processed using the washed method at the farm’s micro-mill. The process includes pulping the cherries, fermenting them for about 48 hours, and washing them with clean water from local rivers. The coffee is then dried over 10–18 days on parabolic beds, which protect it from rain and ensure slow, even drying.
