Caramel Dark Chocolate plum

Second-generation producer Jose Enrique Gutierrez came back to coffee after his family left farming in eastern El Salvador amid low prices and civil war in the 1980s. When he bought his first farm in 2007, he began with a specialty focus, combining traditional agronomic knowledge with more sustainable ideas. At Finca El Limo, coffee grows beneath Inga shade trees, while beans planted between the rows provide food for workers and their families and help fix nitrogen in the soil. For this lot, ripe San Pacho cherries ferment in airtight bags under shade for 68 to 72 hours, then dry on raised beds for 30 to 32 days

Tasting Notes: Plum, ripe nectarine, layered with caramel fudge and dark chocolate. Buttery mouthfeel, delicate rose florals and a subtle almond finish.
