Two very different family coffee stories meet in this filter blend. In Brazil’s high, cool hills of Piatã, third-generation producer Aneilson Souza has spent years transforming the 70 year-old Sítio Capão, using his agricultural training to improve soil health, plant shade trees and build better processing infrastructure. Across the continent at Finca El Limo, second-generation producer José Enrique Gutiérrez combines inherited knowledge with a restless urge to experiment. His San Pacho cherries ferment in sealed bags for 68 to 72 hours before a slow, month-long drying period on raised beds. One component is a carefully selected natural from Brazil, the other an anaerobic natural from El Salvador. Together, they make a pretty excellent little cross-continental collaboration.
