Santa Isabel, a fifth-generation family farm in Guatemala's Alta Verapaz region, spans 300 hectares. The region has a cool climate with abundant rainfall and diverse flora. Established in 1875 and currently owned by Luis Valdés Sr, the farm is managed by his son, "Wicho’ who grew up helping his father on the farm. 200 hectares are allocated to coffee production, cultivating various varieties alongside native inga trees for shade and soil enrichment. This lot is a washed caturra. After being handpicked, the cherries were swiftly transported to the on-site wet mill.They were mechanically sorted and graded by weight, then underwent immediate pulping and up to 17 hours of fermentation. Following washing, grading, and a 24-hour water soak, the coffee was sun-dried for 10–15 days, maintaining a gradual 5% daily humidity drop until reaching 11%.
