Serra Do Cabral Brazil Espresso
This is a very special yellow catuai tropical fermented lot from the Serra do Cabral plateau. After considering the microclimate and topography of their family estate, Flanzer brothers realised great potential for coffee production and commenced planting in 2006. They are still one of the only coffee producers in the region. Part of a tiny 600kg microlot where freshly picked cherries were stored in bags under forrest shade for 24 hours to ferment. The next day cherries are washed, dried and regularly turned for up to 20 days on raised beds and then rested for 30 days in a cool dark environment.
