This tasting pack brings together four versions of one Guatemalan coffee, each processed differently so you can taste fermentation’s impact side by side.
The Fermentation Project is a global tasting experiment created by James Hoffmann and fermentation specialist Lucia Solis with the sensory objective to clearly demonstrate the effect of different fermentation processes.
By keeping the farm, variety and growing conditions the same, the project gives us a rare chance to taste just how much fermentation can shape flavour.
Four coffees. One origin. A very good excuse to taste them side by side.
Inside the pack
Four individually labelled coffees:
Mechanical - 150G
The control coffee. The fruit is mechanically removed, minimising fermentation and giving us a starting point for comparison.
Wild Fermented - 150G
Fermented using the naturally occurring cultures already present on the coffee and in its environment.
Lacto Inoculation - 150G
A selected lactic culture is introduced to guide the fermentation in a more controlled direction.
Yeast Fermented -150G
A selected yeast culture is added to explore how it influences flavour development.
How to taste it
Brew each coffee using the same recipe, water, grinder and equipment. Taste them side by side, take a few notes and see what stands out.
There are no wrong answers here. You might notice a dramatic difference or something much more subtle. That is the fun of it.
