Bolivia Waliki - Filter
Waliki is a small farm in Bolivia’s Bolinda colony, owned by the Rodríguez family, who are at the forefront of Bolivian specialty coffee. This nanolot features Java, a rare variety prized for its tea-like florals, caramelized orange, and green grape notes. Grown at 1,600m, the cherries undergo a meticulous 96-hour anaerobic fermentation before being carefully dried.
The Rodríguez family integrates sustainability by enriching soil with organic matter, planting shade trees, and preserving biodiversity. Their farming knowledge is shared through Sol de la Mañana, a training program for local producers. Inspired by the wine industry, they continuously innovate processing techniques, monitoring fermentation conditions to enhance cup quality.
After harvesting, cherries are transported to the Buena Vista mill, where they are carefully fermented in stainless steel tanks before slow drying in a controlled environment. This attention to detail results in exceptional clarity, structure, and a beautifully complex coffee that embodies Bolivian excellence.
