Jaime Ventura's 3-hectare farm, located at 1700 masl in La Paz, Honduras, has 2.5 hectares dedicated to coffee. Inspired by his family's passion, he founded La Finca el Caimán in 2002, selling a calf to fund his first coffee plants. His coffee is dried for 20 days without depulping. Honduras, known for high coffee production, faces challenges with quality infrastructure, though small-holder farmers are gaining recognition through microlots and competitions. La Paz coffees, influenced by their elevation and climate, have fruity sweetness, while Honduras strives to boost specialty coffee's market potential through research and innovation.
