The Rodríguez family is dedicated to transforming their plantations into exemplary farms for neighboring producers to emulate. In recent years, they have renewed their sustainability efforts across the farm to focus on soil nutrient replenishment, crucial for plant health. Inspired by the wine industry, Pedro Rodríguez also innovates coffee processing techniques. This lot exemplifies their commitment to experimental methods aimed at achieving exceptional quality and diversity in their special coffees. For this lot, cherries were meticulously inspected, sorted by weight with water, and pulped mechanically. Processing expert Iván Hugas oversaw fermentation with controlled bacteria or yeast, sealed in stainless steel tanks for 48 hours to preserve aroma. After washing, the coffee was machine-dried in a 'guardiola' drum for consistency.
